Designed and built for work! The Cleaver is known for big chopping tasks particularly on meat. We designed this Cleaver to be more of a useful tool in the kitchen with the size and weight just right for chopping veggies or splitting a chicken in half. The front of the edge has a slight curve to help with slicing cuts as well. The weight makes it easy to just let the tool do the work.
Specs:
Steel- Acid etched 80crv2. Cryogenically tempered to 59 rc. The rough flats keep pieces from having a suction which reduces the stick of sliced foods. Hollow secondary bevel for extreme sharpness. (Covex bevels can be tougher but less “sharp”). This steel was chosen for is shear durability. It will patina more with use which was the goal. This steel will gain character with anything left on it. It will not “pit” unless it is just left outside wet for days or weeks but will gain dark marks with use. This can be cleaned off if you desire but steel wool. The old school steel look is hard to beat!
Handle- Tasmanian Black Wood polished and finished with Tru Oil for the old school look and feel. Brass pins for security.
